What can be causing this, it seems like it's not getting enough fuel at acceleration or the air to fuel mixture is not correct. Please forgive my ignorance. Any advice is greatly appreciated.

I will add, it starts up just fine no problems. But it is over accelerated when it starts. Now that you guys are talking about it and maybe the accelerator pump.

Check your timing. Make sure sparks are doing the sparky things.

It's either timing or a massive vac leak. Fuel issue it would be lean popping in his face

Something in this is really off. Timing or wrong spark plug wiring or something. Also, I'm curious about the tip-in delay? It seems to be taking a really long time, like there's no accelerator pump.

1 to tdc and it's just wires on the cap in that order, counter clockwise

It's shaking like it has a dead cylinder

Would agree with you. It idles too well to be timing in my opinion. Sounds like a fuel issue.

It's literally skipping at idle.

Weird side hung floats on a truck too. Do the firing order over first. Original is 1-3-7-2-6-5-4-8 If that doesn't work it could have had a cam swapped out?

Sounds like firing order is wrong or there's a dead cylinder, I'm on board with you.

Check your firing order and remember Ford goes 1334 down the right bank and 5688 down the left bank and not back and forth like gm and dodge
