help I have too many potatoes

I work at a cafe whose business model is literally just to sell baked potatoes, so I already eat at least five a week. great cafe by the way.

my absolutely lovely darling little old lady boss knows life is expensive and so sends me home with the unusable potatoes (usually the too small ones) so now I have even more opportunities to eat potato.

despite the aforementioned sweet old lady already paying me more than she should be able to afford, I need these potatoes to stretch my grocery budget, or really, just be my grocery budget. I briefly considered finding a food bank for my extra potatoes but I can’t afford not to eat them.

its potato all the time. I breathe potato. I dream potato. I bleed potato. I am slowly metamorphosing into an Irishman before the famine. when I inevitably break down sobbing before the sheer infinity of potato before me, my tears will taste like salted potato.

I need more ways to eat potatoes. I mash them. I bake them. I fry them. I hashbrown them. I boil them in whatever cheap stock or broth I have, then puree them as a soup base. i make gnocchi. I add strange things to them, like greek yogurt for protein. I’m currently eating julienned potatoes fried with whipped eggs poured over them, which makes something like an omelette.

please send me your weirdest potato ideas. anything I haven’t done especially if it doesn’t taste like potato. I will stop at nothing so long as it is edible. thank you for your wisdom.

sincerely,

the human potato

Desserts!!

I have made a couple of theses but here’s some ideas from gargle,

Old-Fashioned Potato Candy: A no-bake confection made with a small amount of mashed Russet potatoes, softened butter, vanilla, and 6 to 7 cups of powdered sugar, rolled thin, spread with creamy peanut butter, and sliced into pinwheels as shared by Sugar Spun Run.

Southern Potato Cake: A traditional spiced holiday cake featuring warm mashed Russet potatoes, cocoa powder, cinnamon, nutmeg, raisins, and chopped pecans outlined by Southern Living.
Russet Potato Pie (White Potato Pie): A family-recipe pie with a buttery crust and a filling made from mashed Russet potatoes, sugar, butter, eggs, milk, vanilla, and a touch of lemon zest or extract.
Mashed Potato Truffles: Quick 10-minute confections that combine cold unseasoned mashed potatoes with melted dark chocolate chips and vanilla, rolled in cocoa powder or coconut.
Potato Caramel Cakes: Gluten-free individual cakes that incorporate mashed Russet potatoes and a rich salted caramel glaze featured on Cooking On The Weekends. [1, 2, 3, 4, 5]

You can stretch meat with them. For example, when I make tamales with pulled pork, I grate a raw tater or two into the filling as I pan fry it. It disappears into the filling while giving it more body.

I also like to put anything that can go on pasta or rice on a potato sometimes.

I've also seen recipes for candy made with mashed potatoes. Have not tried it, but it's a different way to use them.

Sounds like you're evolving immaculately. I like potatoes so a human potato becoming (well fed) Irish sounds lucky. Nothing weird to add, but sweet potatoes and greens would pretty much complete dietary necessities (macro and micro) and replies to your post should provide challenge and variety.

Good health, Spud!

Can you barter them for some garden tomatoes or peppers?

Don't ignore salad dressing. Blue cheese dressing on a baked potato is pretty good stuff and Italian isn't bad either.

Can make potato perogies. Just make the potatoes lile you would to make mashed potatoes as the filling. Easy, though you'll have to make the dough as well. But these are easy, freeze well & can give them to friends & family, they'll love it. Or even sell them on marketplace or some such 🤷‍♀️

The other 2, potato & leek soup & potato salad. With the salad, look up all the different types as well, ie/ German, Japanese, etc.

Make some little diced up potato squares and season them with taco seasoning and bake or fry then stick in the freezer. Put them on tacos or burritos. They're good.
