Ingredients:
400g almond flour/almond meal
200g butter, softened
120g Lakanto brown monk fruit sweetener
1 whole egg + 3 extra egg yolks
140g sugar-free white chocolate chips
130g pistachios, chopped
2½ tsp vanilla essence
Pinch of salt

Method:
Mix softened butter and sweetener until creamy.
Add egg, yolks and vanilla. Mix well.
Stir in almond flour and salt.
Fold in chopped pistachios and white chocolate chips, saving some for the tops.
Roll into balls and flatten into large circles. Press remaining toppings on top.
Bake at 160°C fan-forced for around 12–17 minutes, until edges are lightly golden and centres just set.
Leave on the tray for 20 minutes before eating.
Makes around 12–13 large cookies. No chilling needed! The trick is not overbaking them if you want soft, fudgy centres.

Keto lemon poppyseed cake

So goooood

Ingredients:
1¾ cups almond flour
3 eggs
½ cup stevia sweetener (adjust depending on brand)
80g butter, melted and cooled
4 tbsp fresh lemon juice (I like mine extra lemony!)
Zest of 1 lemon
2 tbsp poppy seeds
1 tsp baking powder
1 tsp vanilla essence

Cream Cheese Frosting:
100g cream cheese, softened
1–2 tbsp powdered stevia sweetener
1 tbsp lemon juice
A little lemon zest

Method:
Preheat oven to 170°C (160°C fan-forced).
Whisk eggs and sweetener together.
Mix in melted butter, lemon juice, zest and vanilla.
Add almond flour, baking powder and poppy seeds. Gently fold everything together.
Pour into a lined cake tin and bake for around 25–35 minutes, or until a skewer comes out clean.
Let the cake cool completely before frosting.
Mix cream cheese, sweetener, lemon juice and zest until smooth, then spread over the cake.
Sprinkle extra poppy seeds on top!
Super moist, lemony and low-carb. The cream cheese frosting makes it even better!

Commercial low carb frozen pizza

Putting this out into the universe so hopefully someone takes it to production.

We have so many frozen pizza brands and products, Aldi especially gets constantly mentioned for the ones they have... But no one has created a frozen low carb/keto pizza yet. WHY

Imagine if Mission took their wrap recipe and made them bigger and added some toppings. I'd buy the heck out of them!

(And yeah, I know they're easy to make at home. But, lazy)

Discontinued sugar free solo/passiona/lemon lime bitters

They discontinued the sugar free syrups mentioned above, I used to drink these religiously and now I don't have an alternative 😭😭 I've never been so heartbroken. the Sodastream Pepsi Max and Lipton iced teas are disgusting. What are you all using for your sodastreams now?

I have started enjoying the Farmers Union high protein Greek style yoghurt.

Noticed this evening that the pouches are 2.4 carb per 100g but the tub is 4.9!

How does that make sense??

Aside from the buffalo style, or soy based - does anyone have a tried and tested chicken wing recipe

I've got a $hitload of wings to get through, tonight I'm doing one I found online but wondered if there's any you've got in your repeat list that are quick & easy and full of flavour?

Anyone know what's happening with changs lo cal Konjac noodles?

Since mid August, I've haven't been able to find them at Coles and Woolworths. Is this an Australia wide issue or just state specific?

Has anyone managed to snag a few packs in the last month or knows what's going on?

Lipton Peach no sugar iced tea syrup

I have just found this syrup intended for Sodastream. It has no sugar and no carbs, sweeteners are Sucralose and Stevia. This is a concentrated version of the Lipton 1.5 L available from ColesWorth. You can mix it with soda or water. I found it in Woolies. I think there was a previous version with different sweeteners.

Research Study on Keto & Autoimmune Diseases

University of Nottingham are running a research study on people who have an autoimmune disease and have tried keto.

It is a questionnaire style study. You can take it here:

Good to see more research in this area!

New product Would you buy a proper high-fat cream powder in Australia?

Hi all — the mods have kindly given me permission to post this.

I’m looking into whether there’s actually a market in Australia for a high-fat heavy cream powder aimed at keto/low-carb users.

What I’m thinking of is something around 70%+ milk fat, without maltodextrin or vegetable oils, and with a fairly simple ingredient list.

I started looking into it because the Australian options seem very limited, and imported products can get ridiculously expensive once shipping is added.

Before I go any further with suppliers, I’m trying to find out whether people would actually use it, what they’d use it for, and what sort of pack size/price would make sense.
I’ve made a short anonymous survey here — it should take about 2 minutes:

https://tally.so/r/LZevvl

I’m not selling anything at this stage. Negative feedback is just as useful as positive feedback, so please don’t feel like you need to tell me the idea is good.

Also interested in comments here: if you did use powdered cream, what would you mainly use it for — coffee, baking, sauces, travel/camping, increasing fat intake, or something else?

Thanks in advance!

Whole egg Mayonnaise; Australian made and Australian ingredients?

I've been buying Praise whole egg mayo, I looked at the panel today and it says 20% Australian ingredients. I get that the eggs may be or are Australian - but is there anything out there easily available that is up at the 80-90% Australian ingredients?

TBH even if it's less than easily available I'd be interested, I use it a lot so happy to go out of my way for quality.

I tried this yesterday. 10/10 blended with cauliflower rice and regular rice and I couldn’t tell the difference. My first time trying a konjiac product and was very pleasantly suprised. I used 40g raw product which if I’ve done my calculations correct is equal to one serve being 56 calories. It made about 150g cooked rice and was super easy to prepare. Also didn’t notice any stomach discomfort or upset which I was initially worried about due to hearing horror stories of konjac products ! The blend of rice flour in my opinion is definitely worth the extra few cals/carbs. Has anyone else tried this?

Question Cauliflower Rice Disappearing

Where is everybody getting your frozen cauliflower rice from? Not the expensive bird's eye from Coles/Woolies. I was getting the Aldi Market Fare Brand but they have stopped selling it around me (Gold Coast). I go through a pack a day and cannot be bothered with the hassle of making my own. Is there any around I don't know about??

Thanks!!

Question How to eat low carb when eating out?

Hi all,

I am very new to the low carb world. I wast told by my gp to eat low carb (staying to less than 5g/100g of carbs), in order to try reverse pre diabetes.

I'm trying to figure out how to still lead a normal life and occasionally eat out in what I now learned is a carb heavy world. I went to a fish and chips shop with my family and even their grill'd fish is dusted in flour so is unsuitable. I ended up just waiting to eat when I got home 😞.

How are you all eating out, what do you look for?

Please don’t let another great keto product disappear 😭 Pure Eden Jams

Post image
26 Upvotes

I’m honestly getting tired of some of my favourite keto-friendly products disappearing from Australian stores — like Whole Earth Milk Chocolate and Steeves Maple Syrup. One product I really hope doesn’t disappear is Pure Eden Jam. It’s affordable, the sweetener ingredients are relatively clean, and allulose is the main sweetener. It also has a low net-carb count per 100g, which makes it a really convenient keto-friendly option. They have several flavours, including:

🍓 Strawberry 🫐 Blueberry ❤️ Raspberry 🍑 Apricot

In WA, I’ve seen Pure Eden Jams at Spudshed and IGA, as well as through online shopping malls. Pure Eden Jams are really delicious.

I really hope this product sticks around long-term. 🙏 Honestly, I’d love to see it become more widely available at Woolworths and Coles too. It would be great to have an affordable, keto-friendly jam that’s actually easy to find. Has anyone else tried Pure Eden Jam? What do you think?

Question How much are you spending per week on groceries?

I see other posts in other subs with people spending much less. I’m spending $300 on average per week for one person. I usually make one batch recipe per week, like pulled pork or ragu or burger bowls. The other days I bbq something or eat something out of the freezer.

What’s everyone else spending and eating?
