General Question Are these white stringy things between the cuts of this ground turkey normal?

Post image
25 Upvotes

I know it looks like washboard abs but it’s ground turkey sheet pan “kebabs”. I’ve made them a few times and don’t remember this happening the other times. It’s just ground turkey hand mixed with spices, baked then broiled a bit. I made the lines in the raw turkey before baking it. I bought the turkey (99% lean) on Saturday.

General Question Do store-bought microwave meals need to be cooked through to 165 °F?

I sometimes buy microwave meals for the convenience but following the package instructions it always worries me how they get boiling hot while being in a plastic container.

With some exceptions most microwave meals are already cooked and sealed so would it be fine to reheat them just so they are hot but not boiling? Or are they half-cooked? Or is there no way to tell without asking the manufacturer?

After seeing some nonsense cooking instructions on pre-made food I don't trust them blindly.

General Question How to defrost a large slab of meat without a fridge or hot running water?

I have a couple of big slabs of very fatty meat (~2 to 4 kilos each) that I need to defrost for a research project. They’re roughly equivalent to big slabs of steak fat.

The meat slabs are vaccuum sealed and kept in a chest freezer at a warehouse. I need them to stay sealed until I’m ready to use them. I have plenty of coolers, I can bring ice over, and I have a tapwater hose on site, but no hot running water, fridge, or microwave, etc.

What’s the best way to defrost safely?

Pizza rolls in freezer without power

Hello! So recently our power was out while we were out of town, but it was only out for 24 hours almost to the dot. We had a bag of pizza rolls in our freezer, and I’m wondering if it’s safe to eat them? We also had the ice maker and a slab of beef in the freezer, not sure if what else was in there matters or not.

General Question How do you save a tomato?

I just need 1 slice for something, but I can use the rest over the next couple days for stuff like sandwiches, bagels, etc. Would it be best to slice it all the way up and put it in a ziplock? Just take off 1 slice at a time? Or is it not good anymore after slicing?

Simple truth organic tahini

Has anyone else noticed a bad taste in lot #26-076 of simple truth organic tahini?
I buy this product A LOT, I eat it every day, I know how it’s supposed to taste.
I’ve bought five containers from two different stores over the last couple weeks, all with the same lot# on the lid, and they all taste bad to me. Almost like a moldy taste, like maybe it’s rancid?
Anyone else noticing this?

I’ve never seen this before and just purchased this grapefruit today from wegmans. Is this safe to eat? It seems like it’s affecting the inner membrane and not the flesh of the fruit itself. Could I eat the other half if I can’t see any black residue?

How long, in a restaurant, in the state of New Hampshire, can eggs be left outside of refrigeration?

Assuming they’re removed from refrigeration at <41°F and sitting out in room temperature.

We recently got a health inspection and got hit for our eggs sitting out, but my boss doesn’t believe the health inspector was right because he says eggs can sit out for 4 hours. I told him it was 2 and he insisted it’s 4. I googled it and the FDA says it’s 2 but he still says it’s 4- he says usually it’s 2, but in NH, there’s a special instance where if you track the time the eggs were taken out and they don’t reach 70° within 2 hours or something they can be out for 4. I’ve never heard this before and can’t find it anywhere. Is this true??

General Question Freezing chicken in milk brine?

I put some chicken in a milk brine for frying tonight, but dinner plans changed. Would it be detrimental to the chicken to put it in the freezer so I can finish it another night, or should I toss it?

Red kuri squash with white streaks

Post image
1 Upvotes

Red kuri squash I got from my CSA last week has white streaks throughout. I had already cut off and sautéed the ends before I noticed, and they tasted fine though it’s my first time having one so I’m not sure how it’s supposed to taste. No noticeable white in with the seeds, and there’s weren’t any noticeable white spots on the exterior. Is it safe to cook and eat?

Turkey Stock

I was simmering stock on the stove last night and one of my children turned it off. I was off all night. It wasn't maybe Lukewarm this morning. I set it on high and get it going on a hard boil this am. But is it safe? Do I need to toss it?

It’s my squash, OK?

I got the spaghetti squash as a gift from someone a couple months ago and since then it was just in an open cabinet. It looked the same on the outside as when I got it. One of them had a little soft spot so I cut that part and tossed it out. It just looks more stringy and dry than usual. It did not have any mold. I will show you the seeds, but I already toss it out. It smells normal too? Not weird scent to it. (Actually no scent to it. Smells like squash) Can I cook it and eat it?

Any idea what’s going on with my gluten free lemon Oreos filling? I was so excited to try these but I’m a little concerned lol… I had a few the other day and I noticed that it was randomly super sour at times. Now that I opened one up I see that there are chunks in it.

General Question Do I have to throw my work in the garbage??

I canned tomato soup yesterday. I realized this morning I didn’t put any acid in the jars and it might all be a waste. I also used a pressure canning recipe but I used the water bath method. I did a bit of research and none of it sounds like it’s in my favour and being human kinda sucks sometimes.

Here is the recipe: https://www.therusticelk.com/canning-tomato-soup/?utm_source=Pinterest&utm_medium=organic#mv-creation-174-jtr

I water bathed for 50 minutes and it has been sitting on the counter since last night.

PLEASE HELP ME, it breaks my heart knowing I might have to throw it all away

General Question HEB Pouched Refried Beans

I was cooking dinner and emptied a plastic pouch of refried beans into a pot. After cooking for a few minutes, I smelled an awful sour/bad smell. I realized it was coming from the beans. I dumped them and did not eat them.

But I did grate some cheese and eat the cheese with my bare fingers. I’m not sure I properly washed my hands before I realized the beans were bad (I had gotten some of the beans on my fingers when emptying the pouch, and briefly rinsed my hands). My brain of course spirals into thinking this could be an issue. Thoughts? Anyone done this? Thank you!

Forgot to take eggs out of the car...

Important context: I am in the US where store-bought eggs require refrigeration

I bought a case of eggs yesterday, a little over 24 hours ago, and then completely forgot to take them out of my car.

It was in the mid-30s overnight, but during the day the temperature has climbed up into to 60s.

Is there any chance they are salveageable? Would a float test help?
