Marinated and grilled skirt steak tacos are my favorite

Pork shoulder cooked for 10 hours low and slow with orange juice, lime, coriander, cumin, cinnamon, black pepper and salt, homemade blue corn tortillas with griddled cheese, onion, coriander, Tajin, and a little habanero and coffee El Yucateco hot sauce.

Finally found a decent stockist of fresh corn tortillas here in UK. My diet is now like 90% tacos.

Salsa roja - dry roasted and blended.

So I do make the birra stew pretty much traditionally, but instead of frying them in the rendered fat from the stew I just use tallow that I buy by itself. It makes for a crispier shell, and I usually make 50-60 at a time so I wouldn't have enough of the consomme fat for all of them anyway. I use a blend of Oaxaca and mozzarella because it saves some money and they are very similar cheeses. Then I do cilantro, diced white onion, lime juice, a blend of queso fresco and feta, and a Verde sauce I make with tomatillos, Serranos, poblanos, jalapeños, vinegar, and salt. Then I drown them in consomme. Probably my favorite thing to make, they come out delicious every time.

Homemade except for the tortillas!

Made these yesterday for college gameday. Didn’t have proper time nor ingredients, but I made it work because I was craving tacos. Still turned out tasty.

My teen kids love these.

I bought a pork shoulder for £5.01 the other day. So far it’s been a Reuben, a ragù, and most recently, pulled pork tacos!

Pressed the pulled pork flat against a hot carbon steel; seasoned with ancho chili, cumin, and Mexican oregano; crisped up a little; added a small amount of orange juice and garlic to flavour; added some reserved pork juices to loosen.

Then made a tomatillo salsa: charred some onion, garlic (skin on), jalapeño, and tomatillos in a dry pan. Added to a food processor with a bit of salt and blitzed. Adjusted seasoning and lime juice at the end.

Made tortilla chips with the leftover corn tortillas.
