Pinto beans & rice, fried pork chops, turnip greens (yes there is meat in there, it’s just hard to see from this angle), and fried cornbread.

Southern Soul Food Meets Ethiopian Asa Wot 🇪🇹🔥
Ordered some catfish, whiting, fried oysters, shrimp, and chicken wings from JJ Fish & Chicken, but the seasoning was seriously lacking. 😭
Wasn’t about to let all that food or money go to waste, so I decided to turn it into my own version of Ethiopian Asa Wot using some authentic berbere I bought directly from an Ethiopian.
Threw everything into a rich, spicy sauce and let those flavors do their thing.
African-American soul food meets Ethiopian cooking. 🇺🇸🇪🇹
Not gonna lie, this came out WAY better than the original order. 😂🔥
Any Ethiopians or Southerners in here? Y’all rocking with this fusion or am I getting kicked out of the kitchen? 💀

Chicken Rice
I've never made this before, nor have I even had this specific dish before. It may not be the most photogenic dish, but it's very simple, economical, and tasty
Chicken ( I used bone on skin on chicken thighs, but I think a whole chicken might be more traditional) gently simmered (lid on) in a mix of chicken stock and water and onions that had been cooked in some butter. Salt, pepper and a few bay leaves in there too
After the chicken is cooked (took about 20 minutes), remove and set aside to cool a bit. Shred the chicken. Meanwhile, bring the cooking liquid to a boil, add some more butter along with the rice (regular long grain white rice, rinsed) Slowly simmer uncovered until rice is done. (About 15 to 20 minutes)
Stir in shredded chicken. Adjust seasoning. I added a decent amount of black pepper, plus a small splash of dark soy sauce.
This was really tasty. The way I made it is a bit "soupy" and loose. But I have seen other versions of this dish in my Google search where it is less loose and a bit "dry"
It made a lot. I am cooking for just one. I have a lot of leftovers. It actually reheats better that was expecting. I do it in a small sauce pan with a little bit of watermelon to get it back to the original consistency it had the day I made it.

My non-American wife cooked me shrimp grits for dinner...with beans
Looking for opinions. Has anyone ever had beans in grits?? As a southerner, I've never in my life seen this. And I personally think it's disrespectful to grits..lol
Wife was born in Jamaica and raised in Canada.

Collards
Guys due to some health issues I can't eat saturated fats anymore. I used to always cook my collards with ham hocks, but without them the collards aren't any good. What should I do!? Collards are one of my favorite foods😭

Roasted Chicken Dinner
One of my nephews is turning 35 this Sunday but he’ll be in a tree stand all day so I asked what he wanted for dinner. By request we had:
•Roasted Chicken w/ Gravy
•Cabbage n Greens
•Roasted baby potatoes w/garlic & herbs
•Buttered Carrots
Cooking for others is my #1 love language especially for my nieces & nephews. No matter their ages, they always ask for me to make them something which completely melts my heart. We just lost my oldest brother last week, another brother of mine last yr, & our Momma in 2024, so this was a good distraction for a few hrs to put on some music & be in the kitchen. Cherish your loved ones & show them they matter. Hope you & yours have a wonderful weekend. 🌙🦋🩷🍁🦌🎃
