Dough: 48 hours with 24 as biga pre-dough. 70% hydration.

Top: Spinach, Mozzarella, Sheep's cheese, Garlic

Bottom: Mozzarella, in garlic-oil pickled Paprika, salame neapolitana

Spinach one would leave me in bliss, looks so tasty!
