Most rich/flavourful noodle dishes?

• Upvotes

I made a Chongqing beef noodle soup that absolutely blew my socks off last week. Bold, fiery and numbing with lots of deep deep savoury flavour thanks to the doubanjiang, vinegars, Sichuan pepper, chilli.

Just wondered what other noodle dishes you'd recommend with lots of big rich flavours?

Just tried oolongmen seafood Ramyun

So I'm a frequent international aisle browser for interesting ingredients and snacks (cuttlefish chips being a lifelong favourite of mine), and I found the oolongmen Ramyun. It was on sale so I grabbed two for quick lunches. Just tried one. That broth is phenomenal. Super savoury, not too salty (especially compared to north American instant noodles), and actually tasted like a rich seafood broth, also love that they have mushroom in the broth, since I'm a strong advocate of combining mushrooms and seafood. Also nice noodles that aren't mushy. Not an everyday thing, but as far as a cheap noodle cup goes, I'd recommend it.

Gluten-Free Chinese Oat Noodle Rolls - Youmian kaolaolao is an oat noodle dish from northern China. When rolled together, the noodles look like honeycombs. The dish is a specialty of the alpine regions of China, where not much grows except for oats and potatoes.

Ideas for a Noodle Competition

Every year, a group of friends of mine do a food competition. We choose a type of food and a country and we have to make that dish and everyone tries it and we rate them and so on. It’s a lot of fun. Last year it was a soup theme.

This year, I have to select a noodle dish, which admittedly is not my forte in terms of cooking. I’m not a crazy good cook only own, but I can follow a recipe and make tweaks and have it turn out decent.

Anyways, I cannot pick a noodle dish from these countries, as they have already been claimed: Italy, Japan, Malaysia, Poland, and Russia. I’d prefer not to make the most ‘standard’ thing (ie pad thai from Thailand, pho from Vietnam…. Although both are delicious).

I’m looking for any ideas and/or recipes! I live in the Denver area and have access to Asian markets, an H mart, middle eastern markets, and Eastern European markets, just off the top of my head where I’m located, as well as your run of the mill Kroger type grocery store (King Sooper’s is what it’s called out here). But I’m open to anything!

Thank you in advance!
