Saag with Escarole?

I have a bunch of escarole in my garden I’m trying to use up before I t freezes. If I boil it for 2-3 mins to remove the bitterness do you think it would work well for saag?

It’s very mild and I suspect it might

Sure it will just be a sweeter version. I don't know if escarole loses its bitterness like other endives

It’s fairly bitter if you don’t boil it for a few minutes but I can see how after you do that it will be a sweeter flavor than spinach

Why not test it out with a very little escarole first?

Escarole is commonly sautéed or braised, and blanching helps mellow its bitterness
Blanch for 1–2 minutes, drain and squeeze out excess water. This reduces bitterness and prevents watery saag. You can mix half with spinach for good taste.
