General Discussion First pectin mess up 😞

I just made 10 half pint jars of apple jam and didn’t realize until it was time to add pectin that I only had “low to no sugar pectin”. I also had one less cup of sugar than the recipe called for.

I added the pectin I had and will simply pray 😂 is there a rule of thumb on this for the future?

Obviously I will make sure I’m more prepared and have the right things, but I’m just curious because I tried to look it up and didn’t get much info!

Maybe I shouldn’t can on a Tuesday night after a long day of work? 😂

As far as mistakes go, it sounds like you used the correct pectin for the amount of sugar you added

A true Bob Ross “happy accident” 😂 I just get nervous changing anything about a canning recipe because of safety, but I imagine the still-insane amount of sugar added keeps it pretty preserved lol

I can’t can in the evenings. My brain doesn’t work. I prefer starting first thing in the morning to give myself enough time to do all the steps. Also helpful if I have to pivot when I run out of an ingredient like I did with citric acid recently when I was doing tomatoes.

I want to say I learned my lesson but I might make applesauce tomorrow lol! I had so many apples from our trees that I couldn’t fit them in the fridge. Now they’re in the fridge since I’ve used some up, so can probably wait until the weekend.

Shoot even if it doesn't set, you got a nice syrup for the future lol

Luckily it was apples, which have tons of natural pectin. I've got a bunch of recipes from the days before store-bought pectin which basically add apples to most other fruit and cook it down.
